After a bit of futzing around trying to get the appropriate code set up on my still-fairly-new laptop (I got tripped up by installing an old and faulty version of ruby-json), I kicked off a simple Catapult service that returned a list of objects in the Catapult cache as a JSON string.
I hacked a Konfabulator beta widget (which, when ready, will fetch rating stats for listings on the Rails-powered Elevator Pitch site, which is slick) to just make a request to my local service. The Konfabulator code then eval'ed the results, and presto! Instant JavaScript data structure, ready for further manipulation.
So, Konfabulator GUIs for Catapult services is snake simple.
