Here's a good article about using the Excel spreadsheet object in your WinForms app to make disconnected changes to SQL Server data while the data is temporarily stored and modified in the Excel spreadsheet.
Another application of this would be to store the interim data as an Excel spreadsheet so that remote laptop users could make changes while they're out of the office for prolonged periods, and then update the data back to the SQL Server using the same mechanism. Of course, in that case you'd need to build some kind of conflict manager other than what you get with the Excel object.
Interesting premise here. I'd like to see more WinForms apps take advantage of the Office suite of objects when you know the end-user desktop has them installed.
