The upcoming issue (March) of Linux Journal has an article on manipulating OpenOffice.org (OOo) documents using Ruby. The author is James Britt, your humble ruby-doc.org site admin. Though the magazine's web site does not yet mention it, the March issue is featuring OpenOffice with a number of related articles. The content may go online at linuxjournal.com at some point, though I do not know how long the magazine waits before publishing on the web. Subscribers may have earlier access. In the meantime, of course, you can go buy the print copy.
