Courtesy of Ara Howard, I found Tioga. As per the description, "Tioga is an open-source program for creating figures and plots using Ruby, PDF, and TeX". It looks pretty neat so I thought I should give it some free press.
Had my graphing needs been more complex, I probably would have gone with this library over RMagick, because ImageMagick's SVG image generation was sucktastic.
Tioga even has an irb interface of some sort. Cool.
