It seems that the second edition of The Dragon Book is out. I never bought the first edition, but I've heard great things about it. A bit steep at $95.

Along those lines I came across
Writing Compilers and Interpreters: An Applied Approach Using C++, 2nd Edition
. This is the only book I've seen that explicitly mentions creating an interpreter.
