Here's an idea I had a couple years ago, that I was reminded of the other day while eating a roti (South India's version of naan):

Imagine a small restaurant/stall that served fresh, made-to-order naan. But not just any naan! Sure, there would be plain naan. But there would also be sweet and savory naans. Have you ever had peshwari naan? It's fantastic; it has coconut, fennel seeds, and sugar baked in, sometimes also with raisons.

Regarding savory naans, I'm thinking of one with tomatoes and a little onion. A great fast-food-alternative snack. This would be similar to South Indian oothapam. Or imagine a breakfast naan. It would have a fried egg on top (like an egg dosa), possibly also with tomatoes. Other varieties might include eggplant, greens, bell pepper, mushrooms, and so on.

It would be sort of like a crepe stand, only less of a let down. I love crepes, but I always leave crepe stands feeling as though I didn't quite get my money's worth. Not much bang for your buck. But who can argue with a fresh, hearty naan? No big kitchen would be required, only the tandoori oven. And it's fun to watch them smack down the dough, and then fish it out with a large hook. At least as much fun to watch as any barista or crepe maker.

And this place could be called the Naan Stop (because it's naan, and it's fast). Watch out, Starbucks! Italian espresso is alright, but Indian food is interesting too.
