Thanks to Ninja Kitten's Menufela, I now have a very naked desktop. Menufella auto-hides the menu bar. So, you just hover your mouse at the top, and the menu bar pops up. Of course, I've also turned auto-hiding of the doc on, but I've had that for a long time.
I have (and love) a 12" PowerBook, so all the pixels matter. More importantly, it's nice to focus on just the things needed for the current task, as Jon Udell has been outlining. In that respect, the hide option in OS X is invaluable. I use Apple-H all the time.
